I saw such flaps in other cars, like GT40s, but they were usually smaller and made of see-through material (plastic? glass?). I'm not sure what they were for. I think their function was to deflect debris off the windshield, as I read windshields were ruined after Le Mans and often would crack or get pitted so badly they actually had to change them during the race.
