It's probably just lifting up for because of the weight transfer... I don't think he's going for the '60s Gasser look, it's the wrong kind of car.

Unless you just want to test the engine before putting the hood back on, last two engines we rebuilt, we drove the trucks around for a day or two without the hood, just to make sure everything was okay

You can definitely tell this pic is from the '70s....not only for the aging, but also the fact that he's using a tall stance and a tunnel ram.
